Old fashioned tomato carpaccio with laughing cow emulsion

Ingredients

– 6 old fashioned tomatoes
– 20 cl cream 35 % liquid
– 2 portions of Laughing Cow
– 4 tablespoons of white balsamic vinegar
– 10 basil leaves
– salt / pepper

Preparation

  1. Mix the cream and The Laughing Cow, season and put the preparation in a siphon, keep in a cool place.
  2. Make the carpaccio by finely slicing the tomatoes and placing them evenly on the plates.
  3. Season the carpaccio with white balsamic vinegar and chopped basil.
  4. Place the Laughing Cow mousse on the tomatoes.
