Zucchini and radish serpentine tartlet

Ingredients

For the anti-gaspi shortcrust pastry

– 125 stale breadcrumbs
– 60 g of butter
– 1 egg
– ½ packet of baking powder

For the garnish

– 4 portions of Laughing Cow
– 2 small zucchinis
– 4 radishes
– Flower of salt

Preparation

  1. Start by preparing the dough:
    In a bowl, mix the breadcrumbs with the softened butter, beaten egg and baking powder. Mix the ingredients well, form a dough ball, wrap it in cling film and keep it in the refrigerator.
  2. With a vegetable shaver or mandolin, cut long strips of zucchini. Steam them for 1 minute and refresh them in fresh water.
    Dry them, season them lightly with fleur de sel and roll them up to form 4 coils. Also make radish shavings.
  3. Preheat the oven to 200°C.
    Cut 5 mm thick discs of dough and place them in baking circles if you want evenly contoured shortbread or simply on a non-stick baking sheet or one lined with parchment paper. Bake in the oven for 12 minutes and let the dough cool.
  4. Generously spread each shortbread with The Laughing Cow, place the zucchini streamer and radish shavings on top and serve immediately.
