Basil and citrus croquettes

Ingredients

– 8 Mini Babybel
– 200 g fine breadcrumbs from stale bread
– 1 egg
– 40 g of flour
– The zest of an organic orange
– 6 sprigs of basil (about 20 cm)
of large leaves)
– 1 drizzle of peanut oil
– Fine salt and freshly ground pepper

Preparation

  1. Mix 100 g of breadcrumbs with the basil leaves. Mix the remaining breadcrumbs with the orange zest.
    Arrange these two breadcrumbs in two dishes. Beat the egg and two tablespoons of water in a separate dish and season with salt and pepper. Sprinkle the flour in a fourth dish.
  2. Remove wax coating from Mini Babybel. Dip them on both sides in the flour, then in the beaten egg and finally in the basil crumbs to coat them completely.
    Repeat the process to obtain 4 basil cheeses and 4 orange cheeses.
  3. Preheat the oven to 180°C. In a frying pan with peanut oil, brown the cheeses on both sides over medium heat and then put them in the oven for 6 minutes.

Serve the croquettes hot with a green salad a green salad or raw vegetables.
