Organic chickpea hummus
- 2 cloves of garlic
- 7 g salt
- 1 tbsp. cumin powder
- 1 pinch of cayenne pepper - 6 portions of The Laughing Cow
- 1⁄2 lemon
- 3 tbsp sesame oil
- 110 g olive oil
Preparation
1 – Soak the chickpeas at least overnight in water.
2 – Pour the drained chickpeas into a pot, add the quartered onion and the halved garlic cloves.
3 – Add 1.5 L of water and bring to the boil. Cook for 1.5 hours at a simmer.
4 – Drain the chickpeas and keep the cooking water. Reserve a few chickpeas for decoration. Finely blend the chickpeas with the garlic, onion, cumin salt and chilli.
5 – Relax with 10 cl of cooking water and the 6 portions of The Laughing Cow.
6 – Finish with the lemon juice, sesame oil and olive oil.
