Organic chickpea hummus

Ingredients

– 300 g of organic chickpeas
– 1 onion
– 2 cloves of garlic
– 7 g of salt
– 1 c. tablespoon cumin powder
– 1 pinch of cayenne pepper
– 6 servings of The Laughing Cow
– 1⁄2 lemon
– 3 c. tablespoon of sesame oil
– 110 g olive oil

Preparation

  1. Soak the chickpeas at least one night in water.
  2. Pour the drained chickpeas into a casserole dish, add the quartered onion and the halved garlic cloves.
  3. Add 1.5 L of water and bring to a boil. Cook for 1h30 at a simmer.
  4. Drain the chickpeas and save the cooking water. Reserve a few chickpeas for decoration. Finely blend the chickpeas with the garlic, onion, cumin, salt and chilli.
  5. Relax with 10 cl of cooking water and the 6 portions of The Laughing Cow.
  6. Finish with lemon juice, sesame oil and olive oil.
