Peach Kiri Tartlet

Ingredients

– 200 gr of flour
– 3 firm peaches
– 100 gr of butter
– 2 portions of Kiri
– 200 gr of sugar
– 2 c. tablespoon of cottage cheese
– 1 c. coffee of yeast
– 1 pinch of fleur de sel
– 2 egg yolks
– 1 vanilla bean

Preparation

  1. Preheat oven to 180°C.
  2. Mix the yolks with 120 gr of sugar then add the flour, yeast and salt.
  3. Make 4 pie shells with this preparation and bake for about 20 minutes.
  4. Boil 25 cl of water with the remaining sugar and the vanilla bean, scraped off the seeds. Dip the peaches, cut into 8 wedges each, and let cook for a good minute before letting them infuse off the heat for 10 minutes. Let cool.
  5. Mix the Kiri with the cottage cheese and the vanilla beans.
  6. On the cold shortbread, place the vanilla kiri and 6 peach wedges.
