Ingredients
– 200 gr of flour
– 3 firm peaches
– 100 gr of butter
– 2 portions of Kiri
– 200 gr of sugar
– 2 c. tablespoon of cottage cheese
– 1 c. coffee of yeast
– 1 pinch of fleur de sel
– 2 egg yolks
– 1 vanilla bean
Preparation
- Preheat oven to 180°C.
- Mix the yolks with 120 gr of sugar then add the flour, yeast and salt.
- Make 4 pie shells with this preparation and bake for about 20 minutes.
- Boil 25 cl of water with the remaining sugar and the vanilla bean, scraped off the seeds. Dip the peaches, cut into 8 wedges each, and let cook for a good minute before letting them infuse off the heat for 10 minutes. Let cool.
- Mix the Kiri with the cottage cheese and the vanilla beans.
- On the cold shortbread, place the vanilla kiri and 6 peach wedges.
