Japanese pearls with milk and Kiri

Ingredients

– 20 cl whole milk
– 100 gr of tapioca
– 100 gr of sugar
– 1 vanilla bean
– 2 portions of Kiri
– 150 gr of red fruits

Preparation

  1. Boil the milk, Kiri, vanilla bean and 60 g of sugar.
  2. Add the tapioca and cook over low heat for about 40 minutes.
  3. Rinse and cut the red fruits then add 40 gr of sugar and mix gently.
  4. Once cooked, divide the pearls into verrines and let cool before arranging the red fruits.
